In the heart of Petite France with its picture postcard half-timbered houses, as its name suggests, this restaurant combines flavours from near and far. Umami is the fifth flavour in Japanese cuisine, alongside sweet, sour, bitter and salty. A seasoned globetrotter, chef René Fieger signs a market-fresh score scattered with Asian notes yet solidly rooted in Gallic traditions. The chef works alone in his kitchen, conjuring up heroically wondrous fare. Highlights include wontons of veal and a powerful Thai stock of coconut milk or duck breasts flanked by an amazing, orange-flavoured sauce of Asian origin. A fully vegetarian version of the menu is also available on request when booking.
