This authentic and convivial bistro with a nice retro feel (vintage knick knacks, old counter) is a must - visit in Carcassonne. It's popularity is not without good reason: the chef was a pioneer in using organic and locally sourced produce. Snails from the garrigue, traditionally reared squab roasted on a cast - iron skillet. It's always a treat. Highly recommended.
