Hitoshi Araki's restaurant is near Place des Salins. Working alone in the kitchen, the chef cooks up creative French cuisine enriched with passing references to Japan. His indisputably precise execution, remarkable cooking technique and bold flavours come through in dishes such as melt-in-the-mouth pork belly preserved in its own juices and lightly caramelised on the outside – delicious! The lunch menu is a steal.
