Traditional Cantonese cuisine may play the leading role, but the chef also delves into the culinary repertory of Sichuan: Peking duck served in two courses; fresh blue lobster gong bao with glazed aubergines and macadamia nuts; ice plant salad with sesame sauce; red rice rolls with prawns; and a dim sum menu at lunchtime.
