Hélène Darroze's restaurant draws on her memories of her native southwestern corner of France, with nods to the Basque Country, Landes and Béarn. Strong flavours and emblematic dishes (chipirones from Saint-Jean de Luz fried with chorizo, Carnaroli rice with squid ink, parsley and parmesan emulsion), to be enjoyed alone or to share, and desserts that awaken your sweet tooth (chocolate chou with Espelette chilli, peanut praline).
