A yakitori eatery with Wajima lacquered trays? The name ‘Shien’ combines the characters shi meaning ‘will’ and en meaning ‘connection to people’. It can also be read as shien, ‘support’, which Shunsuke Sato hopes his clientele will show him, he adds with a smile. The bowl of chicken soup in the set menu is a unique flourish. The yakitori is grilled over bincho charcoal and finished with rice cooked in an earthenware pot. The warabimochi and dampened chopsticks express the spirit of chakaiseki.
