“Faire Chabrol” is an ancient custom in rural southern France, which consists in adding a little wine to the dregs of soup to further dilute the stock, before gulping it down. In the restaurant of the same name, two childhood buddies seek to enhance simple (but high-quality) ingredients, thanks to modern recipes, strewn with a sprinkling of intelligent inventiveness – to the delight of diners.
