In the heart of a small wine-growing village, this Utopia is being nurtured by a couple we first met in Strasbourg. Now installed in this handsome old edifice enhanced by contemporary fixtures and fittings, the experienced chef (Georges V, Pierre Gagnaire, Jean Imbert…) crafts a set menu in several courses in which vegetables take the limelight: green peas, sorrel, hemp oil; romaine lettuce, tarragon, black garlic and meat jus. Insightful wine-food pairings.
