The cuisine served here is a far cry from the frugal meals that once provided sustenance to this former 17C monastery’s original inhabitants. Perched above the sea, Il Refettorio is now home to German chef Bob Christoph, who conjures up a selection of Mediterranean dishes reinterpreted with a light and balanced touch. The chef’s own definition of his cuisine seems to be a contradiction in terms, in that he describes his dishes as simple and yet complicated at the same time. Our inspectors would add that he pays careful attention to his ingredients and bases his modern cuisine on traditional recipes. Enjoy an aperitif sitting under the pergola of roses and Virginia creeper, surrounded by lush vegetation that creates a tranquil and meditative ambience.
