Situated between Caen and Lisieux in the heart of the Pays d’Auge, Beuvron-en-Auge is emblematic of Normandy with its 17C-18C half-timbered houses, manor houses, apple orchards and gardens decked in flowers come summertime. The restaurant, which occupies the village’s former covered market, sports an olde worlde feel inside and out. Chef Adrien Haye, former second here, reverently respects the seasons: oysters from Saint-Vaast, lobster from Carteret, John Dory, as well as foie gras, veal sweetbread, tripe and andouille sausage with baked apples. The quintessence of Normandy!
