This restaurant, whose reputation has grown by word of mouth, is fully deserving of its success. The chef is very attentive to the quality of his ingredients, most of which are locally sourced, and his creative cuisine, in which vegetables and plants play a pivotal role, is as tasty as it is balanced. Examples include a lunchtime starter of tender winter leaves, soft cheese from the Aveyron, grains and a ponzu vinaigrette. In the evening, things move up a notch with the likes of sea bass fillet from the bay of Cannes, saffron aligot, dashi broth, or veal entrecôte with a spiced jus. Fine home made pasta-the patron is Italian !
