The son, Lucas, who honed his craft in several prestigious restaurants, creates contemporary dishes with a nod to the Alsace terroir: duck foie gras, a selection of damson plums and toasted Gugelhupf; roast Alsace venison loin with cocoa nibs, pear poached in red wine and grand veneur sauce.
