Chef Harrison Cheney's new Nordic culinary training is unmistakable in a culinary program that highlights myriad preservation techniques in carefully sourced vegetables, foraged mushrooms and seafood, with hints of his British roots peeking in as well, exemplified by a delectable Scotch egg featuring quail sausage wrapped around a molten quail egg.
