Having fallen in love with Saint-Tropez, French author Colette bought a small house next to Hotel Sezz, the restaurant of which is now named after her. Chef Philippe Colinet deploys his sure-handed technique to craft stripped-back, plant-forward dishes that showcase vegetables and Provençal flavours – tuck in (dinnertime only) in the bright dining area with minimalist decor in keeping with the hotel, or on the large terrace overlooking the pool.
