After 10 years at Shang Palace, Samuel Lee Sum has set up shop in his "festive neo-bistro". Inspired by a banquet scene from the Song dynasty, he has created an unpolished and relaxed interior with lively background music, in which waiters in aprons banter with customers. The deliberately short Cantonese menu is also available as a five-course set menu. The star of the show is the half Peking duck served in two courses, which must be ordered two days in advance. Crispy skin, tender, juicy meat, thin pancakes, julienned leeks and a thick, fragrant sauce brune make this an absolute must!
