This “somewhere” is the submarine wonderland of former Top Chef contestant Florian Barbarot. Like Captain Nemo, he invites diners to immerse themselves in his subtly creative cuisine in which seafood, seasonal veggies and painstakingly sourced ingredients are inspiringly assembled. While each menu features a different number of courses (3 at lunchtime), the 8-course menu shines the spotlight on one exquisite ingredient crafted in front of diners.
