Two tasting menus are available: Since 2018, dedicated to the chef's iconic dishes, and Viaggio Goloso, inspired by seasonality. Emblematic of his philosophy is [POMOD'ORO], his personal interpretation of pasta al pomodoro, built around seven varieties of Campanian tomato, presented in different textures. Each variety contributes its own nuances of sweetness and acidity, expressing the full aromatic richness of the fruit at the peak of ripeness. A false tomato, fashioned from gelatin, encloses a heart of mozzarella, while basil appears in several forms: a snow that lends fresh aromatic notes, and a soft steamed bun, the ideal vessel for the irresistible final scarpetta.
