In the kitchen, the young chef offers his own take on contemporary Italian cuisine, featuring meticulously prepared dishes that are vibrant in colour and well-balanced in flavour. Meat and fish feature equally prominently on a menu that focuses primarily on Piedmont and its produce, while still incorporating creative and seasonal touches.
