Nestled within the lovely Windy Hill Farm & Preserve, a onetime family farm that has evolved to include a boutique hotel with cottages, Wilder is the culinary centerpiece (open to overnight guests and the general public). Inside, the space has an elegant lodge ambience. Head gardener Amanda Webb tends to a bountiful garden that supports Chef Ben Warwick's garden to table ethos. Expect dishes with plenty of heart and character. Crispy-fried Gulf oysters are set over whipped ricotta and pickled cauliflower for an enticing opener. Main dishes include tilefish with squash purée and corn or a petite strip steak with green tomato and potato gratin. Chocolate molasses cake with toasted marshmallow and chicory ice cream is the perfect ending.
