Dimly lit, moody and intimate, Xolo is a seductive space wholly inspired by Mexico City. Much of the decor is sourced from Mexico, including the stunning ceramics on display above the bar. Cocktails are front and center, with skillful techniques such as double distillations, infusions and clarifications finding their way into balanced drinks. Not sure which one to sip? The Guanabana cocktail with pisco, lemon, vanilla and Greek yogurt is a winner, especially when paired with bar snacks like fries and pickles. Move on to main dishes like the blue corn tetela stuffed with fava beans and topped with watercress and queso de rancho, or taco del la Central with Texas wagyu, refried beans and salsa toreada.
