In a wine-growing village on the Côte Chalonnaise, this pretty building with a yellow façade houses a spacious restaurant featuring exposed stonework and beams, a red hollow-brick ceiling, a monumental fireplace, polished concrete, Corten steel and designer lighting. The chef-owner, a Jura native with seven years of experience in Japan (Tokyo, Kyoto), treats diners to a set menu inspired by the local markets: slow-cooked egg, Morteau sausage, chestnuts in veal jus and potato "broth"; deconstructed lemon tart with shiso ice cream. Minori, meaning "harvest" or "ripening", is a fitting name for a restaurant born of a wealth of culinary experience.
