The two Murani brothers offer compelling reason to venture into this unremarkable neighbourhood east of Foggia’s centre: their cooking. The fresh and colourful dining rooms anticipate a style that finds full expression on the plate, where fragrant and flavourful tastes reveal themselves. The recipes, sometimes inspired by family memories, take shape from Puglian and seasonal ingredients, further elevated by vegetables from their own garden. An exception is salt cod – to which an entire tasting menu is dedicated – yet it remains perfectly in keeping with local tradition: the oven-baked version is excellent, with savoury breadcrumbs, served on a cream of Carpino broad beans and sautéed chicory. The wine list is entirely regional, a coherent choice that completes the experience with authenticity.
