"Sägi" has long been renowned for its superb food, a tradition that is being continued by MICHELIN-starred chef Patrick Zimmermann, who, alongside his wife Corinne, has been running the long-established inn for a number of years. He specialises in classic French cuisine, setting great store by seasonal ingredients and exceptional produce. The exquisite sauces are further testament to the chef's skill. Stripped back to the essentials in terms of flavour, his uncomplicated cuisine is a treat – for example, succulent monkfish fillet cooked until translucent and served with young peas and a full-bodied curry sauce that is creamy, buttery and mildly spicy, or Valais apricots confit in rosemary honey accompanied by a zesty fresh lime sorbet. As for the atmosphere, the rustic ambience – wood panelling, old ceiling beams, pictures and pretty floral decorations – is lovely and cosy. Service is attentive, with the front-of-house team glad to provide spot-on recommendations from the well-curated wine list. In summer, make a beeline for the charming vine-clad terrace with its chestnut tree.
