Both the décor and the cooking are modern, with the experienced chef creating a seasonal tasting menu that showcases a journey through Northern Jutland’s landmarks and ecosystems, from the fjords to the dunes to the forests. Dishes are intricate and well-presented, with a great understanding of balance and flavour, such as in the quenelle of monkfish with beurre blanc and vendace roe. The accompanying wine list is of the highest order.
