De beoordeling van de Michelin Gids
This mythical restaurant, known simply as "Crissier" by its regulars, boasts a star-spangled history. The establishment’s rise to fame began with Frédy Girardet, when it was first awarded three stars in the 1994 MICHELIN Guide, and it has never ceased to flourish with Philippe Rochat, Benoît Violier … and now Franck Giovannini. Today the property also houses an exhibition that tells its 70-year-old history as it pays tribute to a cast of legendary chefs. At the head of an impressive kitchen team, Giovannini continues to roll out Gallic classics of exemplary clarity, rich in big-boned, yet balanced flavours. Lamb in herbs, super fresh red mullet, Nantes duck in a gutsy gravy: the quality of the ingredients is as outstanding as the virtuoso technique. Each dish is a masterclass of well-judged aromas, textures and precision. The equally exceptional wine list is the work of a gifted young sommelière. In characteristic Swiss fashion, the service is swish, yet unostentatious. Superlative gastronomy in a setting that is both warm and timeless, it is the pinnacle of harmony and culinary excellence!
