In the chic part of Bordeaux, between the Allées de Tourny and the Place des Grands-Hommes, chef Alexandre Baumard (previously at Logis de la Cadène in Saint-Émilion and L'Observatoire du Gabriel) has set up this elegant two-storey restaurant. Served in the form of a tasting menu (at dinnertime only), the refined and clear cuisine showcases quality ingredients – not least fish and seafood – that are precisely and creatively prepared, eg delicately cooked prawn placed on a flavoursome reduction of the heads and dressed with a shell bisque vinaigrette. Damien Amilien's desserts, as delicious as they are technical, continue in this subtle vein – with the likes of his cooked and raw cherries with fresh herbs. The food goes into a more accessible bistronomy mode at lunchtime. Attentive service and a terrific wine list.
