In his five- to eight-course set menu, Martin Herrmann places exceptional ingredients centre stage with precision, restraint and superb balance, while weaving in exciting modern touches. One fine example: perfectly cooked sea bass paired with tender squid rings and a fruity-tart shallot marmalade as a striking contrast, rounded off by a wonderful, lightly frothed paella broth – sauces are truly this chef's forte. The breathtaking natural scenery framed by the floor-to-ceiling windows provides a magnificent backdrop.
