The name is a passing nod to an ode composed by Victor Hugo in this very inn back in 1821. The food has remained voluntarily rustic and hearty and faithfully keeps pace with the seasons, in particular the veggies and aromatic herbs. Save room for the wickedly decadent house dessert: a hot vanilla and butterscotch soufflé – to die for!
